I have made a lot of cakes. Cakes that people politely enjoyed. Cakes that were technically correct but somehow forgettable.
And then there are the cakes that make a table go quiet.
This is one of those.
A chocolate mousse cake wrapped in a dark chocolate collar, piled high with chocolate shavings, raspberries and a dusting of icing sugar that makes it look like it just came in from the cold. It is dramatic. It is unapologetically extra. And every single time I make it, people stop talking mid-sentence when it comes out of the kitchen.
Food should make people feel something before they even taste it. This cake does that. Every time.
The components sound complicated but they aren’t. You are making a chocolate sponge, a chocolate mousse, a collar, and some shavings. Each step is straightforward. Together they become something you will be quietly proud of for days.
Chocolate Mousse Celebration Cake — Serves 10
For the chocolate sponge
- 180g dark chocolate (70%), melted
- 150g unsalted butter
- 200g caster sugar
- 4 eggs, separated
- 80g plain flour
- 1 tbsp cocoa powder
- Pinch of salt
For the chocolate mousse
- 300g dark chocolate (60-70%), finely chopped
- 500ml heavy cream, cold
- 3 eggs, separated
- 50g caster sugar
For the chocolate collar & shavings
- 400g dark chocolate, tempered
- Strip of acetate cut to the height of your cake
To finish
- Fresh raspberries and blueberries
- Mint sprigs
- Icing sugar to dust
Method
- Sponge: Melt chocolate and butter together. Whisk in sugar and yolks. Fold in flour, cocoa, and salt. Whip egg whites to stiff peaks and fold through. Bake in a 20cm tin at 170°C for 25 minutes. Cool completely.
- Mousse: Melt chocolate and cool slightly. Whip cream to soft peaks. Whisk yolks with sugar until pale. Whip whites to stiff peaks. Fold chocolate into yolks, then fold in cream, then fold in whites. Refrigerate 2 hours minimum.
- Assemble: Place sponge in a 20cm ring. Pile mousse on top and smooth. Refrigerate until set (2 hours or overnight).
- Collar: Spread tempered chocolate thinly on acetate. Allow to just set but remain flexible. Wrap around the cake. Refrigerate until firm, then peel away the acetate.
- Shavings: Using a vegetable peeler or bench scraper, shave chocolate from a large block. Pile generously on top.
- Finish: Add berries, mint and a cloud of icing sugar just before serving.
When you carry this to the table, do it slowly. Let people see it coming. Let them have that moment before the first slice.
Then watch them go quiet.
That silence — that is why I cook.
