Chocolate Hazelnut Petit Fours — The Art of the One-Bite Thing

A petit four is a test.

Not of skill, exactly. More of philosophy. Because you are making something so small that every single element has to earn its place. There is no room for anything that is just there to fill space. Every layer, every texture, every garnish has to mean something.

That is what I love about them.

One bite. That is all you have to make your case. One bite to give someone chocolate, crunch, richness, and the small joy of something beautifully made.

These chocolate hazelnut petit fours are the kind of thing that disappears off a plate before you have a chance to offer seconds. People pick one up thinking they will be polite and take just one. They go back three times. I have watched this happen at every buffet I have ever set them out at.

I pipe them one at a time. I place the hazelnut by hand. I drizzle the white chocolate carefully. Not because anyone will notice every detail — but because the care goes into the taste somehow. Food made with attention tastes different. I believe that completely.

Chocolate Hazelnut Petit Fours — Makes about 30

For the praline base

  • 200g milk chocolate, melted
  • 100g hazelnut praline paste
  • 80g feuilletine (or crushed wafer/cornflakes)
  • Pinch of salt

For the ganache top

  • 200g dark chocolate (65%)
  • 150ml heavy cream
  • 20g unsalted butter

To finish

  • Whole roasted hazelnuts
  • White chocolate for drizzling
  • Edible flower petals (dianthus or viola)

Method

  1. Praline base: Mix melted milk chocolate with praline paste, feuilletine and salt. Spread into a lined tray about 1cm thick. Refrigerate until firm.
  2. Cut into small rectangles (about 4x2cm). Keep refrigerated.
  3. Ganache: Heat cream until just simmering. Pour over chopped dark chocolate. Leave 1 minute, then stir until smooth. Add butter and stir again. Allow to cool until pipeable — thick but not set.
  4. Transfer to a piping bag with a round nozzle. Pipe a small peak of ganache onto each praline base.
  5. Finish: Press one roasted hazelnut into each ganache peak. Drizzle with white chocolate using a spoon or paper cone. Add a petal just before serving.

Make ahead

  • Bases can be made 3 days ahead and kept refrigerated.
  • Pipe and garnish the day of serving.
  • Keep finished petit fours cool but not ice cold — they taste better slightly above fridge temperature.

Put these on a plate and step back. Watch what happens.

People slow down for them. They look before they pick one up. For just a second, the table gets a little quieter.

That one second — that is the whole point of making something beautiful.
